Rosamonte Selección Especial (Special Selection) is one of the best Argentine yerba mates, no question. Aged for two years and cured with the traditional barbacúa smoking process developed by the Guaraní Tribes hundreds of years ago, this countryside grown mate is as rustic as it gets.
Relying on hard woods throughout the curing process (of flash heating the mate before it’s aged), the true flavors of this multidimensional mate are preserved. Earthy; rich; sweet; dark chocolate; hot waffles with a dab of butter and a few cherries on top; yes, this mate is deep and complex.
The body is a solid medium, with a low amount of powder and a relatively high amount of white stems, making for a consistently smooth taste profile with good buoyancy and vibrancy. We’re not surprised why Rosamonte only has a limited production of this variety. If you’re already familiar with the Traditional Rosamonte, this version is noticeably more elegant and sophisticated.
We recommend using a spoon bombilla (preferably flat) and a wooden gourd. The flat bombilla accentuates the depth of flavor by broadly dispersing the tea across your palate. The wooden gourd helps pull out and smoothen the diversity of flavors. Pay special attention to your mate water with this variety; water that’s too hot will quickly mask the delicate fruity notes. Keep water under 175ºF / 79ºC.
